Background: Moong bean (Vigna radiate L.) plays an important role in antioxidant, antimicrobial, antidiabetic, anti inflammatory, antihypertensive and antitumor effects. Mostly beans legumes cause gas abdominal bloating some people but the moong are easy to digest. Soaking water before cooking also sprouting them reduces this issue. The high levels of amino acids, oligosaccharides polyphenols provide antioxidant not only fight tumors cancer protect against DNA damage cell mutation. seed acts as a nutraceutical because it provides beneficial effects on human health helps prevention cardiovascular disease, diabetes, digestive tract diseases, overweight, obesity etc. flavonoids vitexin isovitexin have free radical scavenging activities which help lower oxidative stress, causative factor. It is blood glucose levels, reduce total cholesterol triglycerides, plasma C peptides glucagon levels. Samples were collected from Legume Section University. Methods: Through NIRS-2500 evaluated samples bean. instrument through Near Infrared (NIR) analysis spectroscopic technique that makes use naturally occurring electromagnetic spectrum. This works region spectrum defined by wavelengths between 700 nm 2500 nm. Result: Histidine acid was varied 6.40% 8.81%, arginine 2.21% 3.87%, valine 2.92% 4.44%, phenylalanine 9.73% 13.86%, isoleucine 9.28% 10.02%, methionine 0.09% 1.26%, leucine 6.02% 7.65%, tryptophan 0.30% 0.68%, lysine 2.03% 2.22% threonine 4.32% 5.56%. grain color direct related carotenoids polyphenols. hardness due fiber amount grain. moisture properties sphericity, porosity, bulk density. anti-nutrients phytic acid, tannins, hemagglutinins associated with storage processing nutrients food needed enable optimization steps, for better mung quality process efficiency.
